Gluten Free Breads
Gluten free breads may seem like a contradiction. The gluten protein found in wheat that kneads together during the bread baking process, gives bread its chewy soft texture that helps it rise. Mostly found in wheat, without it, it may appear that making bread is impossible, or at least not very appetizing. Not true. There are now many substitutes that can serve a purpose just like wheat as well as many restaurants and bakeries that specialize in creating breads that lack wheat altogether.
Many cookbooks have come out in recent years that help the home cook begin their journey of cooking without any wheat products, meaning essentially flour. How this is possible is using various substitutes such as garbanzo bean (chickpea) flour, rice flour, or additives like xanthan gum. These have been used by other cultures for centuries to give a soft chewy texture to their baked goods and now that knowledge is being used to help those looking for a diet free of gluten.
Many specialty bakeries have sprung up in major cities that also produce bread that is free of gluten. These produce entire loaves of various types and also produce convenient products like pizza crusts, which are difficult to find anywhere. However, many large supermarket chains have begun to take advantage of the growing market for wheat free and the like products. Depending upon your area, you’re probably bound to found a least a couple of types of bread that can meet your dietary restrictions.
Though it might seem difficult at first, baking without wheat can be a fun culinary adventure.
