Gluten Free Pasta
Along with breads and many desserts, pasta is probably one of the most important foods that those deciding to avoid wheat and flour in their diet have to let go of. It’s not so much the noodles as it is the wonderful array of pasta sauces that be made fresh, found at the store, or made at your favorite restaurant. This may be disappointing, but there are options available so that you can enjoy gluten free pasta.
Luckily, rice noodles have become more available in the United States and are now cut in traditional pasta shapes. You can find these in most large supermarket chains. They cook in hot water just like normal pasta and can be used a basically a straight substitute for whatever pasta you usually enjoy. A few points about these pastas though. First, rice noodles are much softer than regular pasta noodles made with wheat flours. This means their cooking times should be watched closely so they don’t fall apart even before they hit the sauce. Second, for the same reason, take a close look at the sauce you are serving the noodles with. If it is a really heavy ragu, the noodles make get easily torn by the resistance of the sauce when eating.
Many restaurants also carry these noodles in house. Most will print this on the menu for certain items, but some may not and still carry them. Make sure to ask if it’s possible and for which pastas substitution is available. Keep in mind that it may require a separate cooking pot so it might take a few extra minutes to get your order through.
